Chebe pizza crust made with cheddar cheese, topped with olive oil, garlic, steamed broccoli, parmesan, romano, and mozzarella

Chicken Pineapple Curry
1 large chicken breast half, cut into strips
1 medium onion, chopped
1 head of broccoli florets
2 Tablespoons Thai red curry paste
2 cups coconut milk
2 Tablespoons fish sauce
2 Tablespoons Splenda
1 cup pineapple chunks
2 Tablespoons cornstarch
Brown chicken strips in a pan with a little olive oil. Add onion and cook for a couple minutes. Add curry paste, and stir until chicken is coated. Add coconut milk, fish sauce, Splenda, and broccoli. Cook for 15 minutes. Add pineapple and cook a couple minutes longer. To thicken the sauce, mix cornstarch with 2 Tablespoons water, and add to pan. Stir and cook until thickened. Serve over rice.

Shepherd’s Pie and New Planet Tread Lightly Ale
I used a tablespoon of Worcestershire sauce (make sure it’s gluten-free!) and half the amount of butter in mine. I was quite happy with it.
I also decided to try some gluten-free beer, since I couldn’t drink any Guinness. It’s actually very good, and I’m somewhat of a beer snob.

Sri Lankan Eggplant (Aubergine) Curry
I did not deep fry the eggplant. I just cooked it in the pan along with the onions. I also left out the curry leaves, as I didn’t have any. It turned out amazing. I love eggplant.

Three Hidden Ways Wheat Makes You Fat
I just got back from the doctor, and I’m 20 pounds lighter than I was at my last visit, and I’m now taking half as many pills. All my inflammation symptoms are gone, and the only thing I’m doing differently is not eating gluten. I’ll tell you right now I am not missing that stuff!

Chocolate Avocado Pie
I made something similar to this last night. I used mixed nuts and mixed dried fruit for the crust, and avocado, cocoa powder, vanilla, and some sugar for the filling. I stuck it in the freezer for a very nice frozen dessert.

Cauliflower Crust Pizza
I made this for dinner tonight. Mine didn’t turn out as nice looking as hers, but it was very tasty and satisfying. 3 to 4 minutes broiling was too long for my oven though. I took it out after 2 1/2 minutes and it was already beginning to burn.
